What type of meats should i be eating for gains

So i used to have a massive sweet tooth, on top of which i would frequently order out almost 3 times a week, i also used to smoke cigarettes, over the last 2 months ive cut almost all of it out. Ive lost s considerable ammount of weight and altough i dont suffer from stamina issues the cigarettes seemed to fuck me up mentally.
Now i try and eat steak 3x weekly(fresh from the butchers), i eat chicken and lamb every other day(fresh from the butcher),free range eggs i also consume tuna, king prawns, today i ate makerel, im very much have big appetite for fresh meats, i ensure its fresh from the butcher, is there anything else i need to add to my diet meat wise to get the maximum gains, would adding venison or turkey to my ragime make a difference or am i ok protein wise?.And what about things like eating liver some ppl cant stand it but i dont mind it.and what about canned tuna is it worthwhile or should i go with fresh unpacked fish?

Chicken is fine, canned tuna is too. Supplement with eggs every day and that's good.
