Pan then oven finished, served with cubed roasted potato, green beans, broccoli, served with a balsamic vinegar and cream sauce with mushrooms, slow cooked onions, flat leaf parsley, finely crushed black peppercorns and the meat juices from the resting process stirred in. Fuck yeah. :good

Part way through the pan-crusting. Sorry, no completed dish photo, I just got stuck in and thought of the starving in Africa.

Today was Sunday Roast Pork, roast potatoes, roast parsnips, tenderstem broccoli, Savoy cabbage and sage and onion stuffing with the obligatory meat gravy. Sorry, once again no photos but take my word for it that it was fucking good.

In fact, I do have some shots of the crackling but even the smallest is too big for the site to accept. :sad

Which somewhat scuppers my idea of starting a photography thread when my new lenses arrive next week.

That does sound amazing!
Try taking a screenshot of the pic then trim the edges a bit and saving and uploading the new pic, that’s what I do and works every time.

I've managed to downsize one and am trying another but it isn't being too co-operative. I thought I'd crop it in-camera on the phone and it went fro 4.xMB to over 5MB. :lol:

Anyway, the one I got working.

Easter Sunday and Christmas day it is always spiral sliced ham because that is what the Mrs. really likes for those 2 holidays. We also had a green bean casserole and some bi-color steamed corn on the cob to go with it. Simple, but very tasty.

I baked 3 loaves of banana/nut bread this morning, kept 1 and handed out 2 to my neighbors.

Nothing fancy tonight. Going with the traditional "Red Beans & Rice Monday" in New Orleans. If anyone is interested, here's the recipe for real N.O. style red beans. I'll cut it down from what I usually cook to accommodate the more reasonable folk.

1 lb. red kidney beans
1 large onion diced
1 bell pepper diced
3 ribs celery diced
5 cloves garlic minced
3 bay leaves
4 tbsp. Worcestershire Sauce
2 tbsp. salt or your favorite salt based seasoning. Mine is "Slap Ya' Mama" a local blend.
1 lb. ham cut in 1 inch cubes or 2 smoked ham hocks. Salt pork is another alternative that I will sometimes use.
1 lb. good smoked sausage cut in 1/2 inch rings across the length
Enough water to cover the beans by at least 2 inches at the beginning of cooking

Put the red beans in a large bowl and check for foreign debris and nasty looking beans. Sometimes small clods of dirt will be in the bags of beans. Cover them in hot water to soak while you cut up the seasonings.

Drain the beans, add them to a large pot for cooking-----about an 6 qt. pot as the beans will expand when cooking as they soften. Add water to the pot and make sure you have at least 2 inches of water over the top of the beans.

Turn on the fire and add everything to the pot except the smoked sausage and let this come to a boil, then lower the fire to a low boil just above a simmer. Make sure to stir the pot often so the beans don't start to stick to the bottom. I use a metal heat diffuser under my pot to help with this.

The beans will expand as they cook and then start to soften and it is during this time the water will start to thicken as the beans start to break down a bit. After 2 hours cooking, add the smoked sausage to finish cooking for the last hour. When done, the beans should be soft to the tooth and the gravy will be the consistency of a crepe batter-----somewhat thick and not real viscous.

Cook rice and put some in a bowl, cover with the beans, break off a bit of French bread or make some corn bread and enjoy. I like mine with jalapeno/cheese corn bread.

Well, it was going to be nasi goreng in a few hours from now but I've just realised there's a couple of ingredients I don't have and don't think I can be bothered to go shopping for now.

So it's Plan B, chicken with pesto.

Got some cheap ass barramundi fillets from paddy’s market in Sydney, so going to coat skin side in smoked paprika, and serve with sweet potato mash, & green beans and vine tomatoes roasted together in oil & balsamic, finished with a lemon, garlic,caper and butter sauce.

Instant Pot curry pork with pearl onions, celery and peppers over rice. Started the pressure cooking as soon as I left for work this morning, in 10 hours when I get home it's going to be lovely.

:rofl Wait, what? That's fucking tinned spaghetti? I just don't know where to start my sneers of disgust at that. Pizza with spaghetti is the first obvious wrong, I suppose, but then you have to weigh up the indisputable fact that tinned spaghetti is something not even fit for most animals feed.

However, I did put an out of date tin in for the local food bank a year or two back for the smackheads, dole scroungers and illegal immigrants to fight over like a flock of seagulls over a dead rat.
