Cooked a barbecue over hot coals again tonight, started smoking some sweet potatoes then some chicken wings while I had some on the bone rib eyes in the sous vide with some single malt scotch and butter in the bag with them, seared off the steaks over very hot coals and had the steaks, wings and smoked/baked sweet potato with a healthy potato salad and some home made coleslaw.

I'm supposed to be making nasi goreng tonight. However, having just eaten a big bowl of scrambled egg with smoked salmon and a couple of rounds of toasted, buttered Danish white bread I'm not sure we'll be up for it, might go for something a bit lighter.

For dinner tonight it’s a hot coals BBQ again, I’ve got a wagyu rump cap in the sous vide, in some Auchentoshan American Oak single malt, at 54.5degC and will char that off after a four hour bath...

Stumbled on the Murican food shelf. Decided to try out this gumbo base. Before work quickly through together some chicken stock, chicken thigh, sausage, jalapeno, celery, onion. All the slow cooker.

Blown away how good it tasted. I've never even had gumbo. Have to make a tonne more of these now with a bit more care obviously. Try other combinations

Just think how good the real thing tastes like what comes out of our home kitchens in S.E. Louisiana. I make a hell of a good home cooked gumbo and make a few variations of it depending on what I have on hand. My two favorites are chicken/sausage/okra and a good seafood gumbo with shrimp, crabs, oysters, bay scallops and if available, crawfish.

Oh, and the reason I visited this thread again is to say I dug in the freezer and took out 2 quart bags of homemade crawfish bisque for dinner tonight. I just need to fix some rice to go with it and it's Coonass Heaven in my household.

That's what I was thinking, but I forgot I lent a few pans to my cousin, and was too lazy to was the one I used earlier.

Made a ham and cheddar sandwich with some greens on toasted wheat.

Cooked a side of ocean trout tonight, in a foil parcel with capers, dill, lemon slices and a nice Sav Blanc. Needed seasoning but was still lovely, next time I’ll go back to using verjuice instead of wine. I never took a photo, however, I’ll cook it again in the next week and post up pics.

Simple tonight. I took out from the freezer some red gravy with meatballs and my homemade Italian sausage and will cook some pasta. With that, I'll have a nice salad and I just got done taking a big pan of peach cobbler out of the oven.

Friday I'm frying some of the catfish I've been catching, along with some shrimp for a nice seafood dinner.

Saturday for the college games I'm having deer chili and Sunday for the pro games I'm smoking a pork butt and having that with some baked sweet potatoes and steamed broccoli.

I think I'll do a simple stir fry tonight, chicken thighs, celery, onions, bell peppers, carrots, mushrooms, chopped garlic and ginger with a little hoisin sauce and soy for the savory. So simple, so good.
